Spend in a dutik, or in a café at the airport. We took mango sticks rice on the plane for the rest of the baht))). Much tastier than airplane food.

What makes you think that they will return in baht? So you initially left a deposit in baht. Talk in advance at the reception, maybe you will be refunded in dollars.
