Tell me please, what to do with a visa to Thailand for a child 1 year, 1 month? Adults have a student visa. For such a kid, what options can there be? We worry that insurance may be denied because of overstay, for example.

They can, yes. But there are few options: either a tourist visa, fit into one of the parents, or a guardian visa.
