In Israel, they wanted to sign up for a visa to stay longer on Koh Samui, but there were no free dates to sign up for 2 weeks when they were there. And now we're racking our brains with three children, the only option is to fly to a neighboring country?

You can go to Malaysia or Laos to extend the stamp. You can get a visa there. It depends on your citizenship, on how long you want to stay.
