From the lowest floor of the airport there is an express train to the BCC, you can transfer from it to the BTC city skytrain and find yourself in the city center (it will be easy to manage in an hour). I won't tell you where to walk with the baby, I would have rented a hotel nearby myself and rested for half a day.

The fastest way will be to get to the center by Aeroexpress, the start is on the lowest floor. But if there is no ardent desire to go to the BCC, I would ask at the counter if they can change tickets to earlier ones.

I'm afraid you will spend only 2 hours on the way to the city and back. Plus customs clearance and baggage collection in Bangkok is not a quick process.
