If I stay in Pattaya in a hotel for 7 days, then Residence certificate for 7 days will be issued?

They will, no one knows about the 7 days but you. Take tm 30 and go to immigration.

No. They will write where you live (at the moment) and until what date you can legally stay in the kingdom (until the date of the stamp-visa) and most importantly where the certificate is issued (the name of the bank, category of rights, or whatever else).
