If you need to leave Thailand then it makes no sense to extend you, it will all be reset at check-out.

Well, either in Dubai to do a TR visa, or to enter on a visa-free stamp. STV is unlikely to be made in Dubai. There are too many problems that are difficult to solve not in your home country. And so if we are talking about a long stay - you can think about a student visa.
