Take a bike if you have a license, go to banana beach, paradise beach (it is paid), ride along the coast. On the golf course - they are on the way to banana beach. There is no other way to see the island, let alone Thailand. If you are active travelers at the same location for more than 2 days, there is no point in lingering, my opinion. Phuket is small, in 8 days to go around just fine. You can rent a bike with 2 front wheels, it's a little easier if you are not 100% sure.
