From my experience: you can buy a simple SIM card (not eSIM) for 49 baht (for example TRUE) at 7-11, but this is not a tourist one. you will have to buy bags bleachingly, and then in the salon in Terminal 21 ask to be filled in eSIM. Perhaps you can also do it with a tourist, but I have not tried this option.
