I'm guided by the smell. I was in Tae 4 times for 2 weeks, ate everywhere from makashnits to restaurants. Everything is OK. Seafood, for example, I ate at the night market. When asked about the freshness of the molusks, the seller simply ran his finger over them, and the shells closed — clearly a good sign.
