Within the validity period of the border stamp/visa I can just fly to another country/countries for a weekend and come back? There will not be any questions, problems when returning to Thai?

Well, the stamp will close, when you return a new one will be delivered to you. If there is a visa, then you need to see what kind, there is a single entry, it will burn out when you leave.
