Anything can happen. But usually in 90% of cases they do not steal.

Money left on the table, up to 100 baht is taken as tea, 100,500,1000 are not touched, macbook and small laptop are left in the guesthouse, until nothing was taken, personal experience for 4 years of visits to Phuket and PTT. But maybe we're just lucky.
